Cho bột mì, 30gr đường, muối vào tô. Cắt bơ lạt thành miếng nhỏ rồi cho vào cùng, trộn đều. Thêm nước và tiếp tục trộn thành một khối một dẻo mịn. Dùng màng bọc thực phẩm bọc tô bột lại, để trong ngăn mát tủ lạnh ít nhất 2 tiếng.
Trong lúc đợi bột bánh, bạn gọt vỏ táo, thái nhỏ, bỏ hạt. Cho táo vào tô cùng nước cốt chanh, phần đường còn lại, bột quế, bột gừng, tất cả trộn đều. Cho hỗn hợp lên chảo, xào trong khoảng 5 phút rồi tắt lửa, để nguội.
Bật trước lò nướng ở nhiệt độ 200°C/400°F. Lót giấy nến lên khay nướng và để riêng. Lấy bột bánh ra khỏi tỏ, cán thật mỏng rồi dùng khuôn tròn cắt miếng. Múc 1 ít nhân táo lên miếng bột, lấy miếng bột khác đậy lại, dùng nĩa ấn xung quanh để dánh miếng bột kín lại.
Khía vài lỗ trên mặt bánh rồi xếp bánh vào khay nướng. Đánh tan trứng gà trong bát, dùng cọ quét trứng gà lên mặt bánh. Nướng bánh trong 20 phút cho đến khi chín vàng
