Thường thì những món ăn được kết hợp chung với sả ớt thường đem đến cho người ăn sự hấp dẫn khó cưỡng bởi vị cay nồng của ớt cùng hơi the mát đặc biệt từ sả. Không nằm ngoài “xu thế” này, lòng heo khi được kết hợp cùng sả ớt cũng đem lại vị ngon lạ miệng và độc đáo rất dễ ghiền đó nha.
Lòng non cho vào tô cùng với 1 muỗng canh giấm, muối sau đó bóp kỹ rồi rửa lại thật sạch. Gừng cạo sạch vỏ rồi lấy 1 mẩu gừng nhỏ đem đập dập băm nhỏ, 1/2 củ gừng đem thái lát mỏng. Ớt thái miếng vát chéo, tỏi băm nhỏ, 1 cây sả đập dập rồi cắt khúc dài, 2 cây sả còn lại đem thái miếng vát chéo, hành lá thái nhỏ.
Đổ nước vào nồi rồi cho 1 cây sả đập dập, gừng thái lát, 1 muỗng canh muối vào nồi đun cho sôi mới cho lòng non vào chần sơ qua, lòng chín thì vớt ra ngay. Thái lòng non thành những khúc ngắn vừa ăn cho vào tô, thêm đường, nước mắm, dầu hào, bột nghệ và đảo đều sau đó ướp lòng non 15 phút.
Đặt chảo lên bếp cho 2 muỗng canh dầu ăn, khi dầu nóng bạn cho tỏi băm vào phi cho thơm rồi mới cho sả, ớt thái lát, gừng băm vào xào cho dậy mùi thơm. Tiếp theo bạn cho tô lòng non đã ướp gia vị vào xào, đảo đều rồi rắc thêm tiêu, hành lá thái nhỏ lá tắt bếp.
